Tasty Sugar Free Recipes
Walnut Muffins – Gluten and sugar free – to make 6-8
1/8th cup of mixed sifted coconut flour (biona one is good)
1/8th cup ground almonds
2 tbsps coconut oil (melted)
2 tbsps coconut milk (or almond milk)
3 medium eggs
1/4tsp vanilla essence
1/4 tsp baking powder
2 tbsps almond butter or Tahini
1 tbsps Lucume powder (neals yard supply)
1/3cup walnuts (crushed up)
1/4 tsp sea salt
Method
1.For the batter. Blend together eggs, coconut oil, coconut mik, vanilla, Lucume, almond butter walnuts and salt.
2.Combine coconut flour, ground almonds and baking powder, then whisk into the batter until there are no lumps
3.Pour batter into muffin cups or into a baking try lined with paper cake cases
Bake in pre heated at 200c for 15 mins
Instant Banana Ice Cream
4 very ripe bananas, peeled and cut into chunks
¼ tsp vanilla extract
150ml/5fl oz buttermilk or Greek style yoghurt
Method
- Spread the banana chunks out on a tray and transfer to freezer until frozen (about an hour)
- Remove from freezer and place chunks into a food process with the vanilla and half of the buttermilk/yoghurt
- Blend for a few seconds
- While processor is still running, pour in the remaining buttermilk in a steady stream (if using yoghurt, tip in all at once and blend)
- Serve at once
Carrot and Coconut Cake
½ tsp nutmeg
½ tsp cinnamon
1 tbs sunflower oil
6 fl oz water
125g brown rice flour
150g finely grated carrot
2 heaped tsp of potassium B.P
1 egg
50g unsweetened coconut flakes
Method
- Blend all the ingredients in a food processor until smooth and well mixed
- Place the mixture in a small greased loaf tin and bake in oven at Gas 6, 200C or 400F for approximately 40 mins until firm to touch and golden brown
- Cool on wire tray
Fruity Coconut Treats
50g raw organic coconut oil
75g dates, chopped
75g unsulphured dried apricots, chopped
50g prunes, chopped
50g milled flax seeds
25g pumpkin seeds, roughly ground
25g sunflower seeds, roughly ground
Unsweetened dessicated coconut
Method
- Melt coconut oil in a bowl
- Add the chopped fruit and allow to stand for up to an hour to re-hydrate fruit
- Add the seeds and blitz in a food processor for a few seconds until mixed
- Take a teaspoon of the mixture and form into a small ball
- Roll in the coconut and place on a greaseproof covered baking tray
- Repeat until all the mixture is used (makes about 25 balls)
- Place in the fridge for an hour before eating
Can also be frozen and eaten straight from the freezer
